Target Audience

Individuals who wish to work in the food and beverages (F&B) department of a hotel or a restaurant. The course is also a key course in the diploma program.

Training and development:

The food & beverages staff in a hospitality operation may be made responsible for food and beverage inventories and also have the most regular contact with customers and are vital to the service delivery in an organization. Speaking to customers, understanding their needs, handling orders right up to payment. This course is designed to make you feel at home in F&B and capable of handling all elements of the F&B process. Participants will have attained NVQ level 4 capability by the end of the program.

• Organization and routines in F&B
• Acquire English for F&B staff
• Know drinks and the glasses and cups used for varieties of drinks
• Know food and the plates and cutlery used for varieties of dishes
• Practice how to lay and clear a table for a meal
• Learn how to serve food, drinks and carry trays
• Learn how to recommend drinks and dishes, deal with customer complaints
• Understand how to take an order and note guest special wishes
• Know how to work with the bar/kitchen in delivering orders and collecting them for customers
• Learn how to collect payments
• F&B inventories and their management
• Best practices in F&B

Assessment

There will be a final assessment at the end of the course, consisting of executing a full F&B task cycle.  To receive your diploma, you will need to spend 3 months doing practical work in housekeeping in a hotel.

Qualification: Swiss Certified Food & Beverages Officer, Diploma in Food & Beverages

Entry requirements

• Completion of either O levels or A levels
• Minimum age: 16 years
• English & Customer Service for Hospitality Diploma
